Fudge Icing

  • 5 tablespoons Granulated Sugar
  • 5 tablespoons Water
  • 2 tablespoons Corn Syrup
  • 1 cup Unsweetened Cocoa Powder
  • 2 tablespoons Vegetable Oil
  • 2 tablespoons Solid Vegetable Shortening
  • 4 tablespoons Corn Syrup
  • 8 ounces Unsalted Butter, softened
  • 2 teaspoons Vanilla Extract
  • 2 pounds (8 cups) Confectioner’s Sugar
  • 4-6 tablespoons cold water, to adjust the consistency
  1. In small pot on stove, combine 5 tablespoons sugar, 5 tablespoons water, and 2 tablespoons corn syrup to make the simple syrup; boil for 2-3 minutes then pour into a bowl and allow to sit in the freezer to rapid cool
  2. In bowl of mixer, add cocoa powder and cooled but still warm simply syrup; mix until it forms a firm mass
  3. Add vanilla extract; add vegetable oil and solid vegetable shortening; mix well
  4. Add 4 tablespoons corn syrup and softened butter; mix until smooth
  5. Add the sifted confectioners sugar, little at a time; mix until smooth
  6. Slowly add cold water, 1 tablespoon at a time, until you reach the desired consistency
