Apple Fritters

Ingredients

  • 1 cup flour
  • 1/2 teaspoon Cinnamon
  • 1/2 teaspoon Salt
  • 2 teaspoons Baking Powder
  • 2 teaspoons Lemon Juice
  • 4 cups Apple, peeled and diced into bite sized pieces
  • 2 tablespoons Sugar
  • 2 Large Eggs, room temperature
  • 1/4 cup Whole Milk
  • Vegetable Oil for frying

Glaze

  • 1 1/4 cup Confectioners Sugar
  • 1/4 teaspoon Vanilla Extract
  • 4 teaspoons Water

Directions

  1. Whisk together the flour, baking powder, cinnamon, and salt in a medium bowl
  2. In another bowl combine the lemon juice and apples
  3. In the bowl of a stand mixer with a paddle attachment mix together the sugar and eggs on medium speed until fully combined; reduce the speed to low; add the flour mixture in; mix until just combined
  4. Add the milk; continue to stir until all ingredients are incorporated then fold in the apples
  5. Fill a frying pan halfway with oil; heat over medium heat until the oil reaches 375F
  6. Add batter into the oil 1/4 cup at a time; fry fritters until golden brown; flip and fry the other side until golden brown; the fritters are done when a knife is inserted into the center and comes out clean
  7. Transfer to a paper towel lined cooling rack to let cool; repeat with all of the batter
  8. In a small bowl, combine the sugar, vanilla and 3 teaspoons of water; add 1 teaspoon more or extra until the glaze is pourable
  9. Drizzle the glaze over the cooled fritters; let dry
