Cupcakes
- 1 ¼ cup All-Purpose Flour
- 1 teaspoon Baking Powder
- ½ teaspoon Salt
- ¼ teaspoon Cinnamon
- 4 tablespoons Butter, softened
- 1 cup Sugar
- 1 teaspoon Vanilla Extract
- 1 large Egg
- 1/3 cup Buttermilk
- 1 ½ cups Apple, peeled and shredded (2 medium apples)
Peanut Butter Frosting
- 6 tablespoons Butter, softened
- 1/3 cup Creamy Peanut Butter
- 3 teaspoons Vanilla Extract
- 2 tablespoons Milk, more if needed
- 2-3 cups Powdered Sugar
- Preheat oven to 350F and line pans with cupcake liners
- In large bowl, sift together flour, baking powder, salt and cinnamon; set aside
- In stand mixer, combine butter and sugar; beat for 2 minutes
- Add vanilla extract and egg; scrape down the sides of the bowl as needed to combine evenly
- Add in half of dry ingredients to the wet ingredients then add buttermilk
- Add the remaining dry ingredients and then shredded apples; mix until combined
- Fill cupcake liners ¾ full and bake for 18-25 minutes or until a knife comes out clean
- Let cool
Frosting
- In stand mixer, beat butter and peanut butter
- Add vanilla extract, milk and 1 ½ cups powdered sugar; continue to slowly add powdered sugar until you reach your desired consistency; if it becomes thick like cookie dough add more milk
- Pipe onto cooled cupcakes and top with apple slices
