Apple Cupcakes with Peanut Butter Frosting

Cupcakes

  • 1 ¼ cup All-Purpose Flour
  • 1 teaspoon Baking Powder
  • ½ teaspoon Salt
  • ¼ teaspoon Cinnamon
  • 4 tablespoons Butter, softened
  • 1 cup Sugar
  • 1 teaspoon Vanilla Extract
  • 1 large Egg
  • 1/3 cup Buttermilk
  • 1 ½ cups Apple, peeled and shredded (2 medium apples)

Peanut Butter Frosting

  • 6 tablespoons Butter, softened
  • 1/3 cup Creamy Peanut Butter
  • 3 teaspoons Vanilla Extract
  • 2 tablespoons Milk, more if needed
  • 2-3 cups Powdered Sugar

 

  1. Preheat oven to 350F and line pans with cupcake liners
  2. In large bowl, sift together flour, baking powder, salt and cinnamon; set aside
  3. In stand mixer, combine butter and sugar; beat for 2 minutes
  4. Add vanilla extract and egg; scrape down the sides of the bowl as needed to combine evenly
  5. Add in half of dry ingredients to the wet ingredients then add buttermilk
  6. Add the remaining dry ingredients and then shredded apples; mix until combined
  7. Fill cupcake liners ¾ full and bake for 18-25 minutes or until a knife comes out clean
  8. Let cool

Frosting

  1. In stand mixer, beat butter and peanut butter
  2. Add vanilla extract, milk and 1 ½ cups powdered sugar; continue to slowly add powdered sugar until you reach your desired consistency; if it becomes thick like cookie dough add more milk
  3. Pipe onto cooled cupcakes and top with apple slices
