Baked Potato Casserole

Ingredients

  • 7 Medium Red Potatoes, baked
  • ¼ teaspoon Salt and Pepper
  • 1 pound Bacon, cooked and crumbled
  • 3 cups Sour Cream
  • 2 cups Mozzarella Cheese, shredded
  • 2 cups Cheddar Cheese, shredded
  • 3 Green Onions, sliced

Directions

  1. Preheat oven to 350F
  2. Cut baked potatoes into 1 inch cubes; place half in a greased 13×9 inch baking dish; sprinkle the potatoes with half of the salt, pepper and bacon
  3. Top with only half of the sour cream and the cheeses
  4. Place the remaining potatoes on top of the cheese; then sprinkle with salt, pepper and bacon; top with remaining sour cream and cheeses
  5. Bake uncovered for 20-25 minutes until cheese is melted; sprinkle with sliced onions
