Ingredients
- 7 Medium Red Potatoes, baked
- ¼ teaspoon Salt and Pepper
- 1 pound Bacon, cooked and crumbled
- 3 cups Sour Cream
- 2 cups Mozzarella Cheese, shredded
- 2 cups Cheddar Cheese, shredded
- 3 Green Onions, sliced
Directions
- Preheat oven to 350F
- Cut baked potatoes into 1 inch cubes; place half in a greased 13×9 inch baking dish; sprinkle the potatoes with half of the salt, pepper and bacon
- Top with only half of the sour cream and the cheeses
- Place the remaining potatoes on top of the cheese; then sprinkle with salt, pepper and bacon; top with remaining sour cream and cheeses
- Bake uncovered for 20-25 minutes until cheese is melted; sprinkle with sliced onions
