Baked Pumpkin Pie Oatmeal

Ingredients

  • 1 ½ cups Quick-Cooking Oats
  • 1 cup Pumpkin Puree
  • ¾ cup Milk
  • ¾ cup Chopped Pecans, divided
  • ¼ cup Brown Sugar, packed
  • ¼ cup Granulated Sugar
  • 1 Egg
  • 1 teaspoon Vanilla Extract
  • 1 ½ teaspoons Pumpkin Pie Spice
  • 1 teaspoon Baking Powder
  • ½ teaspoon Salt

Directions

  1. Preheat oven to 350F; grease a 9-inch square baking dish
  2. Mix all ingredients together in a large bowl; stir until well combined; spread into the prepared dish; sprinkle top with ¼ cup chopped pecans; bake for 25-30 minutes, until edges are starting to turn golden brown
