- 8 tablespoons Unsalted Butter
- ½ cup Shortening
- ½ cup Light Brown Sugar
- 1 cup Granulated Sugar
- 2 large Eggs
- 1 ½ teaspoons Vanilla Extract
- 2 ½ cup All Purpose Flour
- ½ teaspoon Salt
- 1 ½ teaspoon Baking Powder
- Toppings: sprinkles, mini chocolate chips, cinnamon sugar, m&ms
- Cream the butter and shortening with both sugars on medium to high speed until light & fluffy, 3-5 minutes
- Combine the eggs with the vanilla extract then slowly add the creamed butter mixture, be sure to scrape the bottom and sides of the bowl after each addition to ensure an even mix
- Add the sifted flour, baking powder, and salt all at once; mix until combined
- Scoop the dough with a 2 ounce cookie scoop onto parchment lined sheet pans spaced 2” apart then place them in freezer
- Preheat oven to 350F
- Once the oven has reached the temperature, remove cookies from freezer then cover with choice of topping, flatten slightly
- Place cookie dough back on sheet pan, bake for 18-22 minutes just starting to get golden brown
