Banana Cookies

Ingredients

  • 3/4 cup Butter, softened
  • 1 cup Sugar
  • 1 Egg
  • 2 ripe Bananas, mashed
  • 1 2/3 cups Flour
  • ½ teaspoon Baking Soda
  • ½ teaspoon Salt
  • ¼ teaspoon Nutmeg
  • ¾ teaspoon Cinnamon
  • 1 ¾ cups Quick Oats

Ingredients for Frosting

  • ½ cup Butter, softened
  • 3 tablespoons Milk
  • 2 teaspoons Vanilla
  • 16 ounces Powdered Sugar

Directions

  1. Preheat oven to 400F; in large bowl cream butter and sugar together until creamy
  2. Add egg; mix until well incorporated; add mashed bananas then mix
  3.  Sift dry ingredients together into the batter; mix until incorporated 
  4. Scoop drops onto cookie sheets then bake for 8-10 minutes
  5. Let cool before frosting
  6. Frosting: cream butter; add remaining ingredients then mix until smooth; add more milk and sugar until consistency has been reached, not too runny
