Banana Crumb Cake

Ingredients

  • 1/2 cup Butter, softened
  • 1 cup Sugar
  • 3 Bananas, ripe and mashed
  • 2 Large Eggs
  • 1 teaspoon Vanilla
  • 2 tablespoons Sour Cream
  • 1 1/2 cups Flour
  • 2 teaspoons Baking Powder
  • 1/2 teaspoon Salt

Crumb Mixture

  • 1/2 cup Butter, softened
  • 1 cup Brown Sugar
  • 1 cup Flour
  • 3/4 teaspoon Cinnamon

Directions

  1. Preheat oven to 350F; lightly spray a 9×13 inch pan with non-stick spray; set aside
  2. Combine softened butter and sugar in a bowl; beat until well combined; add mashed bananas, eggs, vanilla and sour cream; mix to combine
  3. Add flour, baking powder and salt; stir until just combined, do not over mix; pour into the 9×13 pan
  4. In a small bowl combine all of the crumb mixture ingredients; mix with fork until small crumbs form; if over mix a paste will form; sprinkle crumbs in an even/thick layer over the top of the banana batter
  5. Bake for 35-40 minutes until toothpick comes out clean
