Best Fudgy Cocoa Brownies

  • ½ cup Unsalted Butter, melted
  • 1 tablespoon Cookie Oil (olive oil/coconut oil)
  • 1 1/8 cup Superfine Sugar (caster sugar)
  • 2 large Eggs
  • 2 teaspoons Pure Vanilla Extract
  • ½ cup All-Purpose Flour
  • ½ cup Unsweetened Cocoa Powder
  • ¼ teaspoon Salt
  1. Preheat oven to 350F
  2. Lightly grease an 8-inch square baking pan with cooking spray; line with parchment paper; set aside
  3. Combine melted butter, oil and sugar together in a medium bowl; whisk well for about a minute; add the eggs and vanilla; beat until lighter in color
  4. Add flour, cocoa powder and salt; gently stir the dry ingredients through the wet, until JUST combined; do not over beat, this will create cake like brownies
  5. Pour batter into prepared pan, smooth the top out evenly
  6. Bake for 20-25 minutes, or until the center of the brownies no longer jiggles, a tooth pick will come out with crumbs
