- ½ cup Unsalted Butter, melted
- 1 tablespoon Cookie Oil (olive oil/coconut oil)
- 1 1/8 cup Superfine Sugar (caster sugar)
- 2 large Eggs
- 2 teaspoons Pure Vanilla Extract
- ½ cup All-Purpose Flour
- ½ cup Unsweetened Cocoa Powder
- ¼ teaspoon Salt
- Preheat oven to 350F
- Lightly grease an 8-inch square baking pan with cooking spray; line with parchment paper; set aside
- Combine melted butter, oil and sugar together in a medium bowl; whisk well for about a minute; add the eggs and vanilla; beat until lighter in color
- Add flour, cocoa powder and salt; gently stir the dry ingredients through the wet, until JUST combined; do not over beat, this will create cake like brownies
- Pour batter into prepared pan, smooth the top out evenly
- Bake for 20-25 minutes, or until the center of the brownies no longer jiggles, a tooth pick will come out with crumbs
