Blueberry Crumble Mug Cake

Ingredients

  • ¾ cup Blueberries/Blackberries/Raspberries
  • ½ teaspoon Sugar
  • ½ teaspoon Lemon Juice
  • 2 tablespoons Rolled Oats
  • 1 tablespoon All-Purpose Flour
  • 1/2 teaspoon Cinnamon
  • ½ tablespoon Coconut Oil, melted
  • Ice Cream for topping

Directions

  1. In a bowl mix the berries together with sugar and lemon juice; fill a microwave mug right below the rim with berries
  2. Microwave the mug for 45 seconds until the berries become tender and the sauce begins to thicken; make sure it doesn’t boil over
  3. In another bowl, stir together the oats, flour, cinnamon, and coconut oil; spoon the mixture on top of the berries and microwave the mug for 30-45 seconds
  4. Serve with ice cream
