Rickey Eyeball Punch

Ingredients

  • 24 Fresh Blueberries
  • 12 canned Lychees in Syrup, drained
  • 6 tablespoons Syrup from canned Lychees
  • 3 cups Blueberry Juice Cocktail
  • ⅓ cup fresh Lime Juice
  • 2 cups Sparkling Water
  • Ice
  • ¾ cup Gin

Directions

  1. Stick one blueberry into the cavity of each lychee; place on a foil-lined baking sheet and freeze, 1 hour; wait until they thaw slightly before eating
  2. Stir together 6 tablespoons of the lychee syrup, blueberry juice and lime juice in a pitcher until combined; stir in the sparkling water; add the lychee eyeballs
  3. Serve in tall glasses over ice, spooning the lychee eyeballs into the glasses as you pour; stir in the gin before adding the sparkling water
