Ingredients
- 24 Fresh Blueberries
- 12 canned Lychees in Syrup, drained
- 6 tablespoons Syrup from canned Lychees
- 3 cups Blueberry Juice Cocktail
- ⅓ cup fresh Lime Juice
- 2 cups Sparkling Water
- Ice
- ¾ cup Gin
Directions
- Stick one blueberry into the cavity of each lychee; place on a foil-lined baking sheet and freeze, 1 hour; wait until they thaw slightly before eating
- Stir together 6 tablespoons of the lychee syrup, blueberry juice and lime juice in a pitcher until combined; stir in the sparkling water; add the lychee eyeballs
- Serve in tall glasses over ice, spooning the lychee eyeballs into the glasses as you pour; stir in the gin before adding the sparkling water
