Ingredients
- 1 box Blueberry Muffin Mix
- 3/4 cup Old-Fashioned Oats
- 1/3 cup + 2 tablespoons Canola Oil
- 1/4 cup Brown Sugar
- 1 Egg, beaten
- 2 tablespoons Milk
Lemon Butter Glaze
- 1 1/2 cups Powdered Sugar
- 2 tablespoons Melted Butter
- 1/2 teaspoon Lemon Peel
- 2 teaspoon Lemon Juice
- 2 tablespoons Milk
Directions
- Preheat oven to 375F; line baking sheets with parchment paper; set aside
- In a mixing bowl, combine the muffin mix (only the dry mix no box ingredients), oats, oil, brown sugar, egg, and milk; stir together until a soft dough starts to come together
- Portion rounded tablespoons of dough onto the baking sheets; bake for 8-10 minutes; rotate pans halfway through to ensure even baking; once finished, cool completely
- Making the glaze: in a bowl, combine all the ingredients for the glaze except for the milk; if the glaze is too thick add the milk, but it is not necessary; glaze the top of the cookies
