Blueberry Streusel Cookies

Ingredients

  • 1 box Blueberry Muffin Mix
  • 3/4 cup Old-Fashioned Oats
  • 1/3 cup + 2 tablespoons Canola Oil
  • 1/4 cup Brown Sugar
  • 1 Egg, beaten
  • 2 tablespoons Milk

Lemon Butter Glaze

  • 1 1/2 cups Powdered Sugar
  • 2 tablespoons Melted Butter 
  • 1/2 teaspoon Lemon Peel
  • 2 teaspoon Lemon Juice
  • 2 tablespoons Milk

Directions

  1. Preheat oven to 375F; line baking sheets with parchment paper; set aside
  2. In a mixing bowl, combine the muffin mix (only the dry mix no box ingredients), oats, oil, brown sugar, egg, and milk; stir together until a soft dough starts to come together
  3. Portion rounded tablespoons of dough onto the baking sheets; bake for 8-10 minutes; rotate pans halfway through to ensure even baking; once finished, cool completely
  4. Making the glaze: in a bowl, combine all the ingredients for the glaze except for the milk; if the glaze is too thick add the milk, but it is not necessary; glaze the top of the cookies
