Blueberry Sweet Rolls with Lemon Glaze

Rolls

  • 2 ¾ cups All-Purpose Flour
  • 3 tablespoons Granulated Sugar
  • 1 teaspoon Salt
  • 1 packet Instant Yeast
  • ½ cup Water
  • ¼ cup Milk
  • 2 ½ tablespoons Unsalted Butter
  • 1 large Egg, room temperature

Filling

  • 1 ⅓ cup Frozen Blueberries, not thawed
  • ¼ cup Granulated Sugar
  • 1 teaspoon Cornstarch

Sweet Lemon Glaze

  • Juice from 1 large Lemon
  • 1 cup Confectioner’s Sugar
  • 2 tablespoons Milk, Half/Half, or Heavy Cream
  1. Combine the frozen blueberries, sugar, and cornstarch in bowl; gently toss around and let sit while you prepare the dough

Making the Dough

  1. Set aside ½ cup flour; in large bowl, toss the remaining flour, sugar, salt, and yeast together; set aside
  2. Heat the water, milk, and butter together in microwave until the butter is melted and mixture is hot to touch; about 120F; stir the butter mixture into the flour mixture; add the egg and only enough of the reserved flour to make a soft dough (⅓ cup possibly ½ cup) dough will be ready when it gently pulls away from the sides of the bowl and has elastic consistency
  3. On a lightly floured surface, knead the dough for 5-6 minutes; place in a lightly greased bowl; let rest for 10 minutes

Making the Filling

  1. After 10 minutes, roll the dough into a 14×8″ rectangle; pour the sugared blueberries on top and gently spread them to cover the dough surface; roll up the dough tightly; cut into 11-12 even pieces; place in a lightly greased 9-inch round pan
  2. Loosely cover the rolls with aluminum foil; allow to rise in warm area for 2-3 hours; heat oven to 200F turn off oven and place rolls in oven to rise
  3. After the rolls double in size, preheat the oven to 375F; bake for 25-30 minutes until lightly browned; cover with aluminum foil after 15 minutes to avoid over browning

Make the Glaze

  1. Right before serving, top your blueberry rolls with glaze; mix all the glaze ingredients together; want a thicker glaze add more powdered sugar then add salt to cut the sweetness, if desired; want thinner, add more lemon juice or cream; pour over sweet rolls
