Boston Cream Pancakes

Pancakes

  • 1 cup Pancake Mix
  • 1 cup Cake Mix
  • 1 cup Milk
  • 1 teaspoon Vanilla
  • 2 Eggs

Cream Filling

  • 1 package Vanilla Instant Pudding Mix
  • Heavy Cream

Chocolate Ganache

  • 8 ounces Chocolate
  • 1 cup Heavy Cream

Making the Pancakes

  1. Lightly grease a griddle over medium-low heat
  2. In large bowl, whisk together pancake mix, cake mix, milk, vanilla, and eggs
  3. Use a measuring cup to pour ⅓ cup of pancake mix onto pan, flipping when bubbles form on edges

Making the Cream Filling

  1. In large bowl, make pudding according to package instructions
  2. In separate bowl, beat 1 cup heavy whipping cream with 1 tablespoon of sugar until stiff peaks form, 2-3 minutes
  3. Fold whipped cream into pudding mixture

Making the Ganache

  1. Heat cream over medium heat until it starts to simmer; remove from heat and whisk in chocolate until completely melted and combined
  2. Assemble pancakes: one pancake then cream filling then pancake with chocolate ganache over all the pancakes
