Buckeye Cookies

Ingredients

Peanut Butter Filling

  • 1/2 cup Creamy Peanut Butter
  • 1/4 cup Powdered Sugar

Chocolate Cookies

  • 1/2 cup Butter, melted
  • 1/2 cup Sugar
  • 1/4 cup Brown Sugar
  • 1 Large Egg
  • 1 teaspoon Vanilla Extract
  • 1 1/4 cup All-Purpose Flour
  • 1/2 cup Cocoa
  • 1/2 teaspoon Baking Powder
  • 1/2 teaspoon Salt

Directions

  1. In a large mixing bowl, whisk peanut butter and powdered sugar until combined; scoop 12 balls of peanut butter and freeze until cookies are done being prepared
  2. Preheat oven to 350F; line baking sheets with parchment paper; set aside
  3. In a mixing bowl with a stand mixer and paddle attachment, mix butter and sugars on medium speed until just combined, 1 minute; add egg and vanilla, stir to combine; stir in flour, cocoa, baking powder, and salt until just combined
  4. Scoop 12 balls of cookie dough and place on baking sheets; flatten slightly with fingers; remove peanut butter balls from freezer; place one peanut butter ball in the center of each cookie; fold the sides of the dough around the peanut butter ball leaving 1/2 inch hole on top making the peanut butter visible
  5. Bake for 10-11 minutes removing when the cookies are puffy and dry looking; let cool before moving
