Buckeye Pie

Ingredients

  • 1 9 inch Pie Crust
  • 3 tablespoons Cream Cheese
  • 1/4 cup Milk
  • 1/2 cup Heavy Cream
  • 1 cup Confectioners’ Sugar
  • 1 teaspoon Vanilla Extract
  • 1 cup Smooth Peanut Butter
  • 1/4 cup Granulated Sugar

Ganache

  • 1/2 cup Semi-Sweet Chocolate Chips
  • 1/3 cup Heavy Cream
  • 3 tablespoons Unsalted Butter

Directions

  1. With a mixer on high mix cream cheese, milk, confectioners’ sugar, vanilla extract, peanut butter and granulated sugar together for 2 minutes
  2. In another bowl, beat the heavy cream until stick peaks form, 5 minutes; fold the whipped heavy cream into the cream cheese mixture; pour the entire mixture into the pie crust
  3. Cover with plastic wrap; freeze overnight
  4. Let pie defrost for 2 hours then make ganache
  5. Ganache: in a saucepan, bring the heavy cream and butter to a boil; slowly fold in chocolate chips on low heat
  6. Spread the chocolate ganache over the pie; chill in the fridge until set
