Butter Pecan Cookies

Ingredients

  • 1 cup Unsalted Butter, melted
  • ½ cup Granulated Sugar
  • 1 cup Brown Sugar
  • 2 Large Eggs
  • 1 ½ teaspoons Vanilla Extract
  • 2 ½ cups All-Purpose Flour
  • 1 teaspoon Cinnamon
  • 1 teaspoon Cornstarch
  • 1 teaspoon Baking Soda
  • ½ teaspoon Baking Powder
  • 1 ½ cups Unsalted Pecans, roughly chopped and toasted
  • ½ cup Toffee bits

Directions

  1. In a large mixing bowl, cream together butter, granulated sugar, and brown sugar until light and fluffy
  2. Add eggs, vanilla extract; mix until smooth
  3. Add flour, cinnamon, cornstarch, baking soda, baking powder; mix until just combined
  4. Mix in pecans and toffee bits until evenly distributed
  5. Chill dough for 30-45 minutes
  6. Scoop out small portions of the dough and roll into balls; place them on a cookie tray lined with parchment paper
  7. Bake at 350F for 11-14 minutes until the cookies are golden brown
