Carrot Cake Pancakes with Cream Cheese Syrup

  • 1 cup Flour
  • 1 teaspoon Baking Powder
  • ½ teaspoon Baking Soda
  • ½ teaspoon Salt
  • 1 teaspoon Cinnamon
  • 1 teaspoon Nutmeg
  • 1 teaspoon Ginger
  • 1 Egg
  • 2 tablespoons Brown Sugar
  • 1 cup Milk
  • 1 teaspoon Vanilla
  • 2 cups Carrots, finely grated
  • 4 ounces Cream Cheese
  • ¼ cup Powdered Sugar
  • 2 tablespoons Milk
  • 1 teaspoon Vanilla
  1. Stir together flour, baking powder, baking soda, salt, cinnamon, and nutmeg; add ginger, egg, brown sugar, 1 cup milk, vanilla, and carrots
  2. Whisk ingredients together; pour ¼ cup of batter into skillet over low heat
  3. Flip when bubbles appear; allow to cook another minute
  4. Meanwhile, cream together cream cheese, powdered sugar, 2 tablespoons milk, and vanilla; drizzle over pancakes to serve
