Chocolate Chip Cheesecake Cookies

  • 1 1/4 cup All Purpose Flour
  • 1/4 cup Cornstarch
  • 1/2 teaspoon Baking Powder
  • 1/4 cup Unsalted Butter, room temperature
  • 4 ounces Cream Cheese, room temperature
  • 1 large Egg
  • 1 tablespoon Milk
  • 1/2 teaspoon Vanilla Extract
  • 1 1/4 cup Powdered Sugar
  • 6 tablespoons Mini Chocolate Chips

 

  1. In a medium bowl, combine flour, cornstarch and baking powder; put aside
  2. In a large bowl, mix butter and cream cheese with a mixer on medium speed until creamy
  3. Add egg, milk and vanilla extract; continue mixing
  4. Add powdered sugar and mix until mixture is fluffy; add dry ingredients and mix until fine dough
  5. Add mini chocolate chips and stir well; leave in fridge for an hour
  6. Preheat oven to 375F; line two baking sheets with parchment paper; remove dough from fridge and shape into balls
  7. Place on baking sheets 1.5 inches apart; slightly flatten with hands
  8. Sprinkle mini chocolate chips on top
  9. Bake for 10 minutes
  10. Remove from oven and let cool on baking sheet; transfer to wire rack to cool completely
