Chocolate Pumpkin Bars

Ingredients

  • 2 cups All-Purpose Flour 
  • 1 1/2 cups Sugar
  • 2 teaspoons Baking Powder
  • 2 teaspoons Ground Cinnamon
  • 1 teaspoon Baking Soda
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Ground Cloves
  • 4 Eggs, lightly beaten
  • 15 ounces Canned Pumpkin
  • 1 cup Vegetable Oil

Topping

  • 1 cup Mini Semi-Sweet Chocolate Chips
  • 8 ounce Cream Cheese, softened
  • 1/3 cup Sugar
  • 1 Egg
  • 1 tablespoon Milk

Directions

  1. Preheat oven to 350F; line a 15×10 inch baking pan with foil with it overlapping the edges
  2. In a large bowl, stir together flour, sugar, baking powder, ground cinnamon, baking soda, salt and ground cloves; add 4 eggs, pumpkin and oil; stir until combined; spread the batter into the prepared pan
  3. Microwave 1/2 cup of the chocolate chips for 1 minute, stir after 30 seconds; set aside
  4. In a medium bowl, beat cream cheese and 1/3 cup sugar with a hand mixer on medium until combined; beat in one egg, milk and melted chocolate; spoon cream cheese mixture over pumpkin batter; using a knife, swirl the batter; sprinkle the remaining chocolate chips
  5. Bake for 25-30 minutes until a toothpick comes out clean; using the edges of the foil, lift it out of the pan once cooled; cut into bars
