Preheat oven to 300F; grease loaf pan with baking spray; set aside
Toast coconut flakes in the oven for 10 minutes until light brown; careful not to get the coconut too brown, happens quickly; then increase the oven heat to 325F
In a large bowl, whisk together egg, coconut milk, lime juice and vanilla extract
In another bowl whisk together flour, baking powder, salt, butter, sugar, and grated lime zest
Add small amounts of the wet ingredients to the flour mixture until fully combined; stir in shredded, toasted coconut
Pour batter into loaf pan bake for 50-60 minutes
Remove and let cool before covering with glaze
