Coconut Bread

Ingredients

  • ¾ cup Shredded Unsweetened Coconut
  • 3 Large Eggs
  • ¾ cup Coconut Milk
  • 1 tablespoon Fresh Lime Juice
  • 1 tablespoon Lime Zest
  • 1 teaspoon Vanilla Extract 
  • 2 cups All-Purpose Flour
  • 2 teaspoons Baking Powder 
  • ½ teaspoon Salt
  • 4 ounces Unsalted Butter, softened
  • ¾ cup Granulated Sugar

Ingredients for Glaze

  • ¼ cup Powdered Sugar, sifted
  • 1 teaspoon Lime Juice
  • 1 teaspoon Water

Directions

  1. Preheat oven to 300F; grease loaf pan with baking spray; set aside
  2. Toast coconut flakes in the oven for 10 minutes until light brown; careful not to get the coconut too brown, happens quickly; then increase the oven heat to 325F
  3. In a large bowl, whisk together egg, coconut milk, lime juice and vanilla extract
  4. In another bowl whisk together flour, baking powder, salt, butter, sugar, and grated lime zest
  5. Add small amounts of the wet ingredients to the flour mixture until fully combined; stir in shredded, toasted coconut
  6. Pour batter into loaf pan bake for 50-60 minutes
  7. Remove and let cool before covering with glaze

Directions for Glaze

  1. In a small bowl combine powdered sugar and lemon juice; adjust consistency with 1 or more teaspoons of water
  2. Drizzle glaze over bread and enjoy!
