Crab Stuffed Flounder

  • 2 pounds White Fish
  • 1 tablespoon Olive Oil
  • ½ cup Onion, chopped
  • 2 cloves Garlic, finely minced
  • 1 cup Crab Meat
  • 2 tablespoons Cream Cheese
  • 1 teaspoon Old Bay Seasoning
  • Salt & Pepper
  • 2 tablespoons Garlic Chives, finely chopped

Lemon Butter Sauce

  • 2 tablespoons Butter
  • 1 Lemon, juiced
  1. Preheat oven to 375F; in medium saucepan add olive oil, heat to medium heat; add in onions until they begin to sweat down and start to caramelize; then add garlic
  2. Add chopped up crab meat, cream cheese, old bay seasoning, salt, pepper, and garlic chives; stir until well incorporated; remove crab mixture from heat; allow to cool
  3. Lay out white fish; remove all bones and skin; wash and dry; lie on cutting board with the back side up and top side facing down, layer on a thick layer of crab meat mixture on to each fish fillet; spread until even
  4. Roll up each fish fillet; lay with seam side down on greased baking pan
  5. Melt butter; in small cup mix melted butter and lemon juice; add old bay if desired and salt/pepper; drizzle over tops of crab stuffed flounder
  6. Bake crab stuffed whitefish for 20-25 minutes, or until they flake easily with fork; drizzle the pan dripping of the lemon butter sauce over crab stuffed whitefish during the cooking process
  7. Serve the crab stuffed whitefish hot out of the oven with a drizzle of lemon butter sauce with extra wedges of lemon on side
