Cranberry Pound Cake

Ingredients

Cake

  • 1 1/2 cups Cake Flour, sifted
  • 1/2 teaspoon Baking Powder
  • Pinch of Salt
  • 1 cup Cranberries
  • 5 ounces While Chocolate
  • 1/2 cup Unsalted Butter, room temperature
  • 1 1/2 cups Sugar
  • 1/2 cup Heavy Cream
  • 1/2 cup Mascarpone Cheese
  • 3 Eggs
  • 1 teaspoon Vanilla Extract
  • 2 tablespoons Browned Butter

Frosting

  • 1/4 cup Unsalted Butter, softened
  • 4 ounces Cream Cheese, softened
  • 1 1/2 cups Powdered Sugar
  • 1 teaspoon Vanilla Extract

Garnish

  • 1/4 cup Dried Cranberries
  • 1 tablespoon Vegetable Oil
  • 1/2 cup White Chocolate Chips

Directions

  1. Preheat oven to 350F; grease and flour 9x5x3 loaf pans with parchment paper
  2. Combine cake flour, baking powder, and salt; sift; set aside
  3. In a saucepan over medium heat brown 2 1/2 tablespoons butter until amber color; remove foam; set aside
  4. Whisk the eggs with vanilla extract; set aside; mix the butter on medium speed until creamy; slowly add sugar; continue beating until creamy
  5. Add heavy cream and mascarpone; beat on medium speed; turn mixer on low; gradually add dry ingredients alternating with eggs
  6. Add enough flour in with the chocolate chunks to coat them; do the same with cranberries; the flour prevents them from sinking to the bottom of the cake
  7. Add chocolate chunks in to the batter; stir well; gently stir in the cranberries
  8. Pour the batter into the prepared loaf pans; smooth the top; gently tap pan on a countertop to remove air bubbles
  9. With a butter knife, draw a line down the center of the batter; pour the browned butter into the line
  10. Bake until the top of the cake is golden brown and toothpick comes out clean, 55-65 minutes; tent the pan with aluminum foil it the top starts to brown too much
  11. Cool cake in the pan for 15 minutes; remove then cool on rack
  12. Glaze: with a mixer cream together butter and cream cheese until smooth; slowly add in powdered sugar; beat until smooth; mix in vanilla extract
  13. Spread on top of cake; place in fridge until frosting is set
  14. Once the frosting is set, melt 1/2 cup white chocolate chips with 1 tablespoon vegetable oil a sauce pan over low heat until smooth;
  15. Sprinkle the cake with dried cranberries; drizzle chocolate with a spoon over cake
