Fried Mashed Potatoes

Ingredients

  • 3 cups Mashed Potatoes
  • 3 slices Bacon, cooked and crumbled
  • 2/3 cup Shredded Cheddar Cheese
  • 2 tablespoons Chives, thinly sliced
  • 1/2 teaspoon Garlic Powder
  • Kosher Salt
  • Ground Black Pepper
  • 2 Eggs, beaten
  • 1 1/3 cup Panko Bread Crumbs

Directions

  1. In large bowl, combine mashed potatoes with cooked bacon, cheddar, chives, and garlic powder; season with salt and pepper; stir until all ingredients are incorporated
  2. Place eggs and panko bread crumbs into separate bowls; use a cookie scoop to scoop out balls of mashed potato mixture; roll ball in hands to form; dredge first in egg then in panko bread crumbs; repeat until all of mashed potatoes are used
  3. Heat 3 inches of oil in a large skillet until it reaches 375F; fry potato balls in batches until golden on all sides, 2-3 minutes; drain on a paper towel; season with more salt
