Place eggs and panko bread crumbs into separate bowls; use a cookie scoop to scoop out balls of mashed potato mixture; roll ball in hands to form; dredge first in egg then in panko bread crumbs; repeat until all of mashed potatoes are used
Heat 3 inches of oil in a large skillet until it reaches 375F; fry potato balls in batches until golden on all sides, 2-3 minutes; drain on a paper towel; season with more salt
