Green Velvet Cake

Ingredients

  • 2 1/2 cups All Purpose Flour
  • 2 tablespoons Unsweetened Cocoa Powder
  • 1 teaspoon Baking Powder
  • 1/2 teaspoon Baking Soda
  • 1/2 teaspoon Fine Salt
  • 1 1/4 cups Buttermilk
  • 1 tablespoon Green Liquid Food Coloring
  • 2 teaspoons Pure Vanilla Extract
  • 2 cups Granulated Sugar
  • 1 cup Unsalted Butter, room temperature
  • 3 Large Eggs, lightly beaten

Frosting

  • 1/2 cup All Purpose Flour
  • 1 1/2 cups Milk
  • 1 1/2 cups Unsalted Butter, room temperature
  • 1 1/2 cups Granulated Sugar
  • 4 teaspoons Pure Vanilla Extract
  • Pinch of Fine Salt
  • Green Liquid Food Coloring

Directions

  1. Preheat oven to 375F; butter three 8 inch round cake pans; line with parchment paper; set aside
  2. Whisk flour, cocoa powder, baking powder, baking soda and salt in a medium bowl; set aside; whisk the buttermilk, food coloring and vanilla together; set aside
  3. Beat the granulated sugar and butter together in a stand mixer with a paddle attachment on medium speed, 5 minutes; with the mixer still running, slowly add the eggs and beat until fully incorporated; reduce the speed to the lowest setting; while the mixer is running, add 1/3 of the flour mixture then 1/2 of the buttermilk mixture; then 1/2 of the remaining flour mixture and remaining buttermilk mixture; lastly the remaining flour mixture
  4. Scrape sides of mixing bowl and beat until fully incorporated; divide batter evenly among the three cake pans; bake until toothpick comes out clean, 20-25 minutes; let cool for 15 minutes in pan before removing
  5. Frosting: put the flour in a small saucepan; vigorously whisk in 1/2 cup of milk; whisk until it is a smooth thick paste; slowly whisk in the remaining milk until fully incorporated and mixture is smooth
  6. Cook over medium heat and whisk continuously until it is very thick, 5 minutes; if any lumps appear whisk vigorously; scrape frosting into a bowl; press plastic wrap onto the surface; refrigerate until cool, 45 minutes
  7. Using a stand mixer with the paddle attachment, beat the butter and granulated sugar on medium speed until light and fluffy, 5 minutes; add the cooled flour mixture a tablespoon at a time; beat until smooth
  8. Switch to the whisk attachment; add the vanilla, salt, and 3 drops of food coloring; whip until light and fluffy, 10 minutes
  9. Place one layer of the cake of a plate; spread frosting and repeat with the 2 remaining layers; frost side and decorate to your desire
