Ingredients
- 3/4 cup Hot Cocoa Mix
- 1 1/2 cups All-Purpose Flour
- 1/2 cup Sugar
- 2 teaspoons Baking Powder
- 1/2 teaspoon Salt
- 2 Eggs
- 3/4 cup Milk
- 1/2 cup Butter, melted and cooled
- 1 1/2 teaspoons Vanilla Extract
- 3/4 cup Mini Chocolate Chips
- 1/2 cup Mini Marshmallows, cut in half
Directions
- Preheat oven to 375F; coat a 12 cup muffin tin with cooking spray
- In a large bowl, combine hot cocoa mix, flour, sugar, baking powder, and salt; set aside
- In a medium bowl, whisk eggs, milk, butter, and vanilla; fold egg mixture into flour mixture just until mixed; stir chocolate chips into batter; evenly divide batter into muffin cups
- Bake 18-20 minutes until toothpick comes out clean; remove from oven and top with marshmallow halves, cut side down; return to oven for 1-2 minutes to soften the marshmallows; let cool 5-10 minutes then remove to wire rack to cool completely
