Hot Cocoa Cookies

Ingredients

  • 1 cup Unsalted Butter, softened
  • 1 cup Granulated Sugar
  • 2/3 cup Brown Sugar, packed
  • 2 Eggs
  • 1 teaspoon Vanilla Extract
  • 3 1/4 cups All-Purpose Flour
  • 3/4 cup Hot Cocoa Mix
  • 1 teaspoon Salt
  • 1 teaspoon Baking Soda
  • 2 teaspoons Baking Powder
  • 1 cup Chocolate Chips
  • 1 cup Freeze Dried Marshmallows

Directions

  1. Beat butter and sugars together in a large bowl until light and fluffy, 2-3 minutes; add eggs and vanilla; mix well
  2. In a separate bowl combine dry ingredients; gradually mix dry ingredients into butter mixture until well blended; do not over mix
  3. Stir in chocolate chips and freeze dried marshmallows; cover and chill for a minimum of 30 minutes
  4. When ready to bake preheat oven to 350F; place 2 tablespoons of dough onto the baking sheets lined with parchment paper
  5. Bake 9-11 minutes; cool on baking sheets for 5 minutes
