Irish Potato Bites

Ingredients

  • 20 Small Red Potatoes
  • 1/2 cup Corned Beef
  • 1 /4 cup Cheddar Cheese, shredded
  • 1 tablespoon Butter, melted
  • 1/8 teaspoon Salt
  • Sour Cream, optional

Directions

  1. Fill a large pot with water; bring it to a boil; add potatoes; boil until they are fork tender
  2. Preheat oven to 400F
  3. Once potatoes are cooked and have cooled cut each one in half; cut a small slice off the rounded end allowing the potato to sit up
  4. Scoop out the inside of each potato half, save the potato insides in a bowl
  5. Add cheese, corned beef, butter to the bowl with the saved potato insides
  6. Salt mixture to taste; sprinkle salt over the potato halves
  7. Scoop mixture into potato halves; place them on a baking sheet
  8. Place baking sheet in oven for 10 minutes
  9. Remove from oven; serve with a scoop of sour cream
