Midnight Chocolate Cupcakes

Ingredients 

  • 2 cups Sugar
  • 1 ¾ cups All-Purpose Flour
  • 1 cup Milk
  • ½ lime, freshly squeezed
  • 2 Eggs
  • 1 ½ teaspoons Baking Soda
  • 1 ½ teaspoons Baking Powder
  • ½ cup Vegetable Oil
  • ¾ cup Cocoa Noir Powder
  • 1 teaspoon Salt
  • 2 teaspoons Vanilla Extract
  • 1 cup Hot Coffee

Directions

  1. Heat oven to 350F; line a cupcake tin with liners
  2. Stir together sugar, flour, cocoa, baking powder, baking soda, and salt in large bowl
  3. Combine milk and lime juice in a bowl; allow to sit to thicken, 5 minutes; add eggs and vanilla; whisk together
  4. Add milk mixture and oil to the dry mixture; beat on medium speed with mixer for 2 minutes
  5. On the lowest speed slowly pour coffee into bowl; pour batter into cupcake liners, ½ full
  6. Bake for 22-25 minutes until toothpick comes out clean; cool completely
