Ingredients
- 2 cups Sugar
- 1 ¾ cups All-Purpose Flour
- 1 cup Milk
- ½ lime, freshly squeezed
- 2 Eggs
- 1 ½ teaspoons Baking Soda
- 1 ½ teaspoons Baking Powder
- ½ cup Vegetable Oil
- ¾ cup Cocoa Noir Powder
- 1 teaspoon Salt
- 2 teaspoons Vanilla Extract
- 1 cup Hot Coffee
Directions
- Heat oven to 350F; line a cupcake tin with liners
- Stir together sugar, flour, cocoa, baking powder, baking soda, and salt in large bowl
- Combine milk and lime juice in a bowl; allow to sit to thicken, 5 minutes; add eggs and vanilla; whisk together
- Add milk mixture and oil to the dry mixture; beat on medium speed with mixer for 2 minutes
- On the lowest speed slowly pour coffee into bowl; pour batter into cupcake liners, ½ full
- Bake for 22-25 minutes until toothpick comes out clean; cool completely
