Oatmeal Raisin Cookies

Ingredients

  • 2 cups All-Purpose Flour
  • 1 teaspoon Baking Powder
  • 1 teaspoon Salt
  • 1 teaspoon Apple Pie Spice
  • 1 1/2 cups Unsalted Butter, softened
  • 1 cup Granulated Sugar
  • 1 cup Brown Sugar
  • 2 Large Eggs
  • 1 teaspoon Vanilla Extract
  • 3 cups Old Fashioned Oats
  • 1 1/2 cups Raisins

Directions

  1. Preheat the oven to 375F; line baking sheets with parchment paper; in a medium bowl combine the flour, baking powder, salt and apple pie spice
  2. In another bowl with a mixer, cream together the butter and sugars on high until light and fluffy, 3-4 minutes; scrape the bowl; add in the vanilla and eggs and mix; turn the mixer on low and slowly add in the flour mixture; scrape the bowl again then turn the mixer on low; mix in the oats and raisins
  3. Using a 1 1/2 tablespoon cookie scoop, scoop the dough into equal portions
  4. Bake for 12-14 minutes until slightly golden; cool for 5 minutes before removing
