Paleo Pizza

Ingredients

  • 2 1/2 cups Almond Flour, more for dusting
  • 1/2 teaspoon Baking Powder
  • 1 teaspoon Italian Seasoning
  • Pinch of Garlic Powder
  • 1/2 teaspoon Kosher Salt
  • 3 Large Eggs
  • 2 tablespoons Extra-Virgin Olive Oil
  • 1/2 cup Pizza Sauce
  • 1 cup Dairy-Free Mozzarella, shredded
  • 1/4 cup Pepperoni Slices
  • 1/4 Small Red Onion, thinly sliced
  • 1/2 Small Green Bell Pepper, thinly sliced
  • 1/4 cup Sliced Black Olives
  • 2 Cremini Mushrooms, thinly sliced
  • Pinch of Red Pepper Flakes

Directions

  1. Preheat oven to 425F; position the rack in the third slot near the top
  2. In a bowl whisk together almond flour, baking powder, Italian seasoning, garlic powder and salt
  3. In another bowl whisk together eggs and olive oil; pour into dry ingredients; stir until dough forms; transfer dough to a piece of parchment paper; place another piece of parchment paper on top; roll dough to 1/4 inch thickness; remove top piece of parchment paper
  4. Slide bottom piece of paper with crust to a baking sheet; bake until crust is lightly golden, 10 minutes
  5. Spread pizza sauce evenly over crust leaving a 1/2 inch border; top with mozzarella followed by vegetable toppings; return to oven; bake until cheese is melted and crust is golden, 10 minutes
  6. Turn oven to broil; broil until cheese is golden, 2 minutes
  7. Garnish with red pepper flakes before serving
