Potato Cakes

Ingredients

  • 3 cups Mashed Potatoes
  • 3 Large Eggs
  • 1 cup Shredded Cheddar Cheese
  • 1 1/2 cups All-Purpose Flour
  • Vegetable Oil

Directions

  1. Place mashed potatoes, eggs, cheese, and 1 cup of flour into a mixing bowl; stir until well combined
  2. Gradually add 1/2 cup more flour until potatoes become thick enough to hold their shape on the griddle
  3. Heat a large skillet with 1/4″ oil in the bottom over medium heat
  4. Once the oil is hot, drop the batter by 3/4 cup full into the oil; shape into a pancake with a spoon
  5. Cook until the cake is golden brown on one side; flip then continue to cook until the patty is golden brown on second side and throughly cooked
  6. Place a wire rack on a baking sheet; remove cakes and place on wire rack so extra oil drips down
  7. Top with sour cream and green onions
