Shrimp and Pasta

Ingredients

  • 1 pound Angel Hair Pasta
  • 1 ½ pound Medium Shrimp, peeled and deveined
  • 1 tablespoon Coconut Oil
  • 3 Cloves of Garlic, minced
  • 3 teaspoons Paprika
  • 1 tablespoon Dried Parsley
  • Ground Black Pepper

Ingredients for Sauce

  • ½ cup Mayonnaise
  • ½ cup Thai Sweet Chili Sauce
  • 2 Cloves of Garlic, minced
  • 2 tablespoons Lime Juice
  • ⅛ teaspoon Crushed Red Pepper Flakes

Directions

  1. Mix the sauce ingredients together in a bowl; set aside
  2. Cook pasta in a large pot of boiling water; drain
  3. Place the uncooked shrimp in a medium sized bowl; add the paprika, 3 cloves of garlic and pepper
  4. Heat the coconut oil on medium high heat; add the coated uncooked shrimp
  5. Stir constantly while cooking until pink 7-10 minutes; remove from heat; set aside until pasta is ready
  6. In a large serving bowl combine pasta, shrimp and sauce mixture; stir until combine; garnish with parsley
