Ingredients
- 5 Medium Potatoes
- 4 Eggs, hard boiled then shells removed and chopped
- 3 Spring Onions, diced
- 1 cup Mayonnaise
- 1 1/2 tablespoon Spicy Brown Mustard
- Salt and Pepper to Taste
Directions
- Place the whole potatoes (with skins) in a large saucepan with water to cover the potatoes; boil until potatoes are cooked through but not over cooked; a fork should be able to reach the center of the potato without resistance
- Drain the water and allow the potatoes to cool; after they have cooled, peel and dice the potatoes and place in a large bowl
- Place the chopped eggs and green onions in the bowl; in a small bowl combine the mayonnaise and mustard, whisk to combine; pour over the potatoes; fold to incorporate; salt and pepper to taste; refrigerate for an hour before serving
