Spicy Mustard Potato Salad

Ingredients

  • 5 Medium Potatoes
  • 4 Eggs, hard boiled then shells removed and chopped
  • 3 Spring Onions, diced
  • 1 cup Mayonnaise
  • 1 1/2 tablespoon Spicy Brown Mustard
  • Salt and Pepper to Taste

Directions

  1. Place the whole potatoes (with skins) in a large saucepan with water to cover the potatoes; boil until potatoes are cooked through but not over cooked; a fork should be able to reach the center of the potato without resistance
  2. Drain the water and allow the potatoes to cool; after they have cooled, peel and dice the potatoes and place in a large bowl
  3. Place the chopped eggs and green onions in the bowl; in a small bowl combine the mayonnaise and mustard, whisk to combine; pour over the potatoes; fold to incorporate; salt and pepper to taste; refrigerate for an hour before serving
