Sweet Potatoes with Maple Pecan Sauce

Ingredients

  • 2 pounds of Sweet Potatoes 
  • 4 tablespoons Unsalted Butter
  • ½ teaspoon Salt

Maple Pecan Sauce

  • ½ cup Maple Syrup
  • ½ cup Chopped Pecans

Directions

  1. Preheat oven to 425F; peel and slice the sweet potatoes into 1 inch thick slices; place them on a roasting pan but don’t let them touch
  2. Melt the butter and drizzle it over the sweet potatoes; sprinkle them with salt; toss the sweet potatoes to coat; lay them in a single layer on the roasting pan
  3. Roast for 20 minutes; flip with tongs; roast for another 20 minutes
  4. The potatoes are done when golden brown and crisp
  5. Maple pecan sauce: bring the male syrup to a boil in a small sauce pan; add pecans
  6. Wait for the sauce to come back to a boil; cook for 1 minute then remove from heat
  7. Pour the sauce over the sweet potatoes and serve
