Ingredients
- 2 pounds of Sweet Potatoes
- 4 tablespoons Unsalted Butter
- ½ teaspoon Salt
Maple Pecan Sauce
- ½ cup Maple Syrup
- ½ cup Chopped Pecans
Directions
- Preheat oven to 425F; peel and slice the sweet potatoes into 1 inch thick slices; place them on a roasting pan but don’t let them touch
- Melt the butter and drizzle it over the sweet potatoes; sprinkle them with salt; toss the sweet potatoes to coat; lay them in a single layer on the roasting pan
- Roast for 20 minutes; flip with tongs; roast for another 20 minutes
- The potatoes are done when golden brown and crisp
- Maple pecan sauce: bring the male syrup to a boil in a small sauce pan; add pecans
- Wait for the sauce to come back to a boil; cook for 1 minute then remove from heat
- Pour the sauce over the sweet potatoes and serve
