Thai Pasta Salad

Ingredients

Dressing

  • 1/4 cup Peanut Butter
  • 1/4 cup Orange Juice
  • 1 tablespoon Liquid Aminos
  • 1 Clove Garlic, minced
  • 1 tablespoon Maple Syrup
  • 3 teaspoons Sriracha
  • 2 tablespoons Unseasoned Rice Vinegar

Salad

  • 8 ounces Garbanzo Bean Rotini Pasta
  • 4 Scallions, sliced
  • 1 cup Cucumber, chopped
  • 1 cup Carrots, shredded
  • 1 cup Cabbage, chopped

Directions

  1. Cook the pasta according to package instructions; drain pasta; rinse with cold water
  2. In a large bowl, whisk together all dressing ingredients; add the pasta together with the vegetables; toss to blend; serve
