Vodka Pasta

Ingredients

  • 1/4 cup Olive Oil
  • 3 Garlic Cloves, minced
  • 6 ounce can Tomato Paste
  • 1/4 cup Vodka
  • 14 ounce can Full Fat Coconut Milk
  • 1 pound Rotini
  • 1 teaspoon Salt

Directions

  1. Heat olive oil over low heat; add the garlic; sauté until fragrant
  2. Add the tomato paste; stir until the tomato paste is a deep red; add the vodka and let it sizzle out; add coconut milk and salt; let the mixture simmer for a little
  3. Cook pasta according to package directions; drain and toss with the sauce
