White Chocolate Cranberry Pistachio Cookies

Ingredients

  • ½ cup Brown Sugar, packed
  • ½ cup Granulated Sugar
  • ¼ teaspoon Salt
  • 1 Egg
  • 1 teaspoon Vanilla Extract
  • 1 ½ cups All-Purpose Flour
  • ½ teaspoon Baking Soda
  • 1 cup White Chocolate Chips
  • ½ cup Pistachios Nuts, shelled and chopped
  • 1 cup Dried Cranberries

Directions

  1. Preheat oven to 375F; grease a cookie sheet
  2. In a large mixing bowl, combine the butter and sugars; using an electric mixer, cream the butter and sugar until fluffy, 3-5 minutes; beat in the egg and vanilla extract
  3. In another bowl, combine the flour and baking soda; using a wooden spoon carefully stir the flour mixture into the butter mixture until just combined; stir in the white chocolate chips, dried cranberries and pistachio nuts
  4. Drop spoonfuls of dough onto the greased cookie sheet
  5. Bake cookies for 8-10 minutes until just starting to turn golden brown; allow cookies to cool for 2 minutes on cookie sheet before transferring them to a wire rack to cool completely
