Zucchini Brownies

  • 2 cups Finely Grated Zucchini
  • 1 cup Brown Sugar
  • 1 ⅓ cup Unsweetened Applesauce
  • 2 Eggs
  • 2 teaspoons Vanilla
  • ⅔ cup Flour, Oat Flour
  • 1 cup Cocoa Powder
  • 1 teaspoons Baking Powder
  • ½ teaspoon Cinnamon
  • ½ teaspoon Salt
  • Optional Add-in: 1 cup chocolate chips/nuts
  • Frosting: ½ cup chocolate chips, ½ cup butterscotch chips, ½ cup peanut butter melted together
  1. Preheat oven to 350F; grease a 9×13″ pan
  2. Mix together the zucchini, sugar, applesauce, eggs, and vanilla
  3. Stir together the remaining ingredients and add to the wet ingredients, stirring until combined
  4. Stir in the chocolate chips/nuts if using
  5. Bake for 55 minutes
  6. Frost with frosting if desired
